• Apple Banana Muffins



    2 large eggs lightly beaten
    1 cup mashed ripe banana
    1 Tbsp organic grass-fed butter, melted
    1 1/2 cup almond flour
    3/4 tsp. baking soda
    1 dash Himalayan salt
    1/2 cup chopped apple

    Preheat oven 350 degrees. Prepare 9 muffin cups.
    Combine eggs, banana and butter in a medium bowl. Mix well.
    Combine almond flour, baking soda, salt in a medium bowl. Mix well.
    Add almond meal mixture to egg mixture and mix until well blended.
    Add apple and mix.
    Divide batter evenly between prepared muffin cups.
    Bake 16-18 minutes or until golden brown and toothpick inserted into the middle comes out clean.
    Transfer muffin to rack and let it cool.
